I make A LOT of lasagna (IFKYK) for family, friends, and co-workers. I thought it fitting the first recipe I share on the blog be my lasagna recipe. It is so good and oh so filling. It can be prepared ahead of time and frozen or made fresh and baked the same day. The recipe I'm sharing with you today I most often prepare and bake fresh. Did I mention it's great for giving away or serving a large group? If you can't tell, I have an infinity for lasagna. Delicious, saucy, cheesy lasagna.
*Edited to add: I recently learned while traveling with my mother that this recipe which she taught me, my grandmother had taught her. A fact I never learned while my grandmother was living. The original recipe titled Grace’s Lasagna has been retitled to My Family Favorite Lasagna in memory of my grandmother and the legacy she left behind through food.
A few things I have learned along the way about preparing and serving lasagna are:
Never over fill your pan! It will cause the sauce to spill over the edges as it cooks, leaving your oven a smoky-burnt mess.
When using a disposable pan, get a high quality - heavy duty one. I can't stress this enough!
If you bake it at a temperature over 350 degrees, cover it with a large piece of aluminum foil generously coated with non-stick spray for the first half of the baking process to prevent the cheese from browning to quickly. The spray will help keep the cheese from sticking to the foil
Let your cooked lasagna rest for at least 10 minutes before serving. This will help it hold its shape as you begin to plate your portions.
