Is there anything better on a weekend morning than a cup of coffee or two and a plate of breakfast casserole? I don’t think so except for the breakfast bowl at the Hyatt Regency Resort Sarasota, iykyk. My go to breakfast casserole recipe is versatile and I usually add whatever I have on hand which is typically bacon and sausage. I recommend you make it this weekend.
If you prefer a lighter option, two cups of diced and sautéed vegetables can be substituted for the animal protein. I personally love the substitution of spinach, onion, mushroom, and tomato. The same goes for the cheese just substitute four ounces of your favorite hard shredded cheese. Serve it hot with your favorite condiments and for a special occasion French toast on the side.
